Spiced Roasted Oyster Mushrooms
The crisp, savory-sweet mushroom filling from Ottolenghi’s mushroom tacos, pulled out as a standalone component. Torn oyster mushrooms roasted hard until browned and chewy-crisp, glazed with soy and maple and a homemade cumin-chile-allspice blend.
Why It Works
- Torn, not sliced — ragged edges give more surface area for browning and crisp, lacy bits.
- Soy + maple is a classic umami/sweet pairing: the soy brings glutamates and salt, the maple caramelizes for color and a roasted edge. Together they push the mushrooms toward a meaty, almost-jerky character.
- High heat, two-stage roast — spreading across two sheets first prevents steaming (mushrooms hold a lot of water); consolidating onto one sheet for the final 8 minutes lets them brown and crisp once the moisture has cooked off.
- Bloom the spice in the dish, finish with the oil — most of the freshly-ground cumin/chile/allspice mix roasts into the mushrooms, while a spoonful held back in olive oil becomes a raw finishing drizzle, keeping the spice aromatic and bright on top.
Ingredients
- 1 lb 8 oz (680 g) oyster mushrooms, roughly torn
- 2 garlic cloves, crushed
- 3 tbsp soy sauce
- 4½ tsp maple syrup
- 7 tbsp (105 ml) olive oil — split: 5 tbsp (75 ml) for roasting, 2 tbsp reserved for the finishing oil
- Table salt
- 1 tsp cumin seeds
- 4 dried cascabel chiles (or ancho chiles), stems removed, roughly broken
- ½ tsp allspice berries
Instructions
- Preheat the oven to 425°F / 200°C fan. Line two large rimmed baking sheets with parchment paper.
- In a large bowl, mix the mushrooms with the garlic, soy sauce, maple syrup, 5 tbsp (75 ml) of the olive oil, and ¾ tsp salt.
- Blitz the cumin seeds, chiles, and allspice berries to a powder in a spice grinder (or mortar and pestle). Put 1½ tsp of the spice mix into a small bowl with the remaining 2 tbsp olive oil and set aside — this is a finishing oil, don’t roast it. Stir the rest of the spice mix into the bowl of mushrooms.
- Transfer the mushrooms to the prepared baking sheets, spread out as much as possible (crowding steams instead of roasts), and roast for 20 minutes.
- Combine all the mushrooms onto one sheet, mix well, and continue to roast for another 8 minutes, until crisp and browned.
- Drizzle with the reserved spiced finishing oil before serving.
Variations & Substitutions
- Mushrooms — oyster mushrooms are ideal for their texture, but king oyster (torn into strands), maitake, or a mix would all work. Avoid watery button mushrooms here.
- Chiles — cascabel give a nutty, mild-medium heat; ancho are the easy sub (sweet, raisiny, mild). Guajillo also works for a brighter, slightly sharper note.
- Maple syrup — load-bearing for the glaze/caramelization; honey or agave can sub but shift the flavor.
- Soy sauce — tamari to keep it gluten-free.
