String Bean and Mushroom Stir-Fry
Ingredients
4 oz (110 g) string beans (a small handful)
4 shiitake mushrooms
1 king oyster mushroom
5 oz (150 g) frozen tofu
1 tsp (5 g) ginger, minced
Seasonings
1 tbsp Pixian chili bean paste
1 tbsp soybean paste
1/2 tsp brown sugar
1/2 tsp ground pepper
2 tsp mushroom oyster sauce
1½ tbsp traditional soy sauce
1/2 tsp Sichuan peppercorn oil
1/2 tsp Chinese black vinegar
4 small chili peppers
Instructions
Chop everything into small chunks
Par-boil the string beans first
Cook the mushrooms + frozen tofu to add color, then remove
Add oil and add in garlic + ginger
Add in spicy bean paste
Then add in other bean paste
Add in other ingredients
Cook
Add in liquid seasonings except chilis and vinegar, add those after we turn off the gas
